The Light of Spring, the Midnight Sun of Summer, and the Autumn "Ruska"
Nature in Lapland and across Finland awakens in Spring, as the snow crust sparkles against the sun and streams begin to murmur after breaking free from the ice. It is a time of new beginnings, where light triumphs over darkness.
In Summer, nature is bursting with energy. The Midnight Sun provides the power to roam forests and fells at any hour. The air is filled with the scent of Labrador tea and birdsong, while the cool lake waters invite you for a refreshing dip.
As Autumn arrives, nature dons its most magnificent attire. The "Ruska" season paints the land and trees in vibrant shades of orange, red, and yellow. The air turns crisp and fresh—making it the perfect time for long hikes, topped off by a campfire meal that tastes better than ever before.
A Hiker’s Favorite: Traditional Sausage Soup (Makkarakeitto)
Sausage soup is a cornerstone of Finnish home cooking—simple, fast, and nutritious. It is perfect for the home kitchen, a camping stove, or a campfire shared with family and friends.
Ingredients (5 servings):
½ pkt (approx. 270–290 g) Finnish "lenkki" sausage (e.g., HK Sininen)
4–5 (400 g) potatoes
1–2 (100 g) carrots
1 pkt (300 g) soup vegetables (fresh or frozen mix)
1.2 l water
1–2 tbsp beef fond (or a bouillon cube)
2 bay leaves
10 allspice berries
Fresh parsley, chopped
Instructions (Preparation time: 15–30 min):
Preparation: Peel and dice the potatoes and carrots. If using fresh soup vegetables, dice those as well. Chop the parsley.
Boiling: Bring the water to a boil in a large pot. Add the fond, bay leaves, allspice, and the diced potatoes and vegetables. Let simmer for about 15 minutes.
Adding the Sausage: Peel and dice the sausage. For extra flavor, you can lightly brown the sausage pieces in a frying pan before adding them to the pot, or simply add them directly.
Finishing Touches: Heat the soup through and ensure the vegetables are tender. Sprinkle plenty of fresh parsley on top before serving.
Tip! You can save time by using frozen soup vegetables. Add them to the soup at the very end along with the sausage to ensure they maintain their texture.
