When vacationing in Finland, be sure to try fried vendace at a restaurant. Fried vendace in a pan is a classic Finnish dish. Fried vendace cook up quickly and are heavenly delicious. Serve them with mashed potatoes and tartar sauce, for example. Here's the recipe:

Fried Vendace in a Pan: A Classic Fish Dish
Ingredients:
Approx. 500 g cleaned vendace (approx. 600 g uncleaned)
1 dl rye flour
0.5 dl breadcrumbs
1 tsp salt or to taste
(white pepper)
Butter and rapeseed oil for frying
Instructions:
Mix the dry ingredients together. Roll the vendace in the flour mixture. This is easily done in a bowl.
Heat a knob of butter and a splash of oil in a pan.
Fry the vendace in batches until golden brown, a couple of minutes on each side.
Fried vendace are at their best when freshly cooked. Serve immediately, for example with mashed potatoes and tartar sauce.
