Finnish Bilberry pie

Ingredients

150 g butter or baking margarine, at room temperature
1 cup sugar
1 large egg
2 1/2 cups all-purpose flour
1 teaspoon baking powder
2 packages (200 g each) Bilberryes
4 tablespoons sugar
1 tablespoon potato starch
Instructions

Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9x13 inch baking pan.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg until well combined.

In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Press the dough into the prepared baking pan.

In a medium bowl, combine the blueberries, sugar, and potato starch.

Pour the Bilberry mixture over the crust.

Bake for 15-20 minutes, or until the crust is golden brown and the blueberries are bubbly.

Serve warm or cold, with vanilla ice cream or sauce.

Tips:

For a richer flavor, use brown sugar instead of granulated sugar.
Add a pinch of salt to the dough for more flavor.
If you don't have fresh blueberries, you can use frozen blueberries. Just thaw them first and drain off any excess juice.
For a more tart pie, add a tablespoon of lemon juice to the blueberry mixture.
