Wild Food from Finland-Bilberry
Wild food – berries, mushrooms, wild herbs and vegetables as well as fish, game and reindeer – is derived straight from Arctic Finnish nature.
Bilberries are low in fat and rich in fibers. Bilberries contain vitamins C and E. The most significant health benefit of the bilberry, however, is the anthocyanin compounds it contains.
Bilberries can be used as a raw ingredient in berry soups, baking, milkshakes, porridge and juices. Bilberries can be preserved by freezing, drying or crushing or by cooking them to make juice or jam. Bilberries are used in the food industry to produce juice, jam, juice concentrate, dried berries, and berry powders as well as grain and dairy products.
